Folding means you withdraw from the game but cannot win (even if your cards are better than others).
The idea of poker is that other players think you have a better hand than them even if you don't. By keeping a straight face all the time so no one can tell if you have a good or bad hand. If you have a good hand you don't want people to fold too early - you want them to keep playing so they will bet more money that you can win.
